Simple Sponge Mix for Your Pantry
Another great time saver is this simple sponge mix. I like to spend a little time over the weekend weighing up my various mixes for the pantry and this mix is always a favourite. Once its weighed up and stored in a jar, making cup cakes becomes a doddle and so quick.
- 1370g self raising flour
- 1130g sugar
- 10 tsp baking powder.
- 1/2 tsp salt
Sieve the flour and baking powder into a bowl.
Add the sugar and mix together with a whisk.
Place into a jar or container of your choice and label.
This mix makes 10 x 12 cupcakes or 10 sponge tray bakes.
It keeps in sealed container or jar for 3 months.
