Simple rice dish for dinner.
If you have a busy day and are looking for a simple rice dish for dinner this one is very cheap and easy. You could always prepare the vegetables beforehand and keep them in the fridge.
Ingredients: Serves 4
300g long grain rice
2 large carrots
1/2 of large red pepper cut into small pieces
1/2 of large green pepper cut into small pieces
1 clove garlic sliced small
100g of chopped chorizo
1 stock cube
1 tsp paprika
salt and pepper to taste.
Few drops of oil.
Place oil in a large pan.
Add onions and garlic and cook for a few minutes, do not allow to go brown.
Add the peppers, carrots and chorizo cook gently just to soften a little.
Add the paprika mix and then add the rice.
Just let the pan sit on a low heat for a few seconds and stir all ingredients together.
Pour over the water and stock cube.
Stir and place on the lid.
Cook gently for around 10 minutes checking to make sure it hasn’t dried out.
Once all the water has gone stir and plate up.
I use a little chilli sauce on ours as it gives that little extra kick.
