simple cookie recipe
I think everyone looks for a simple cookie recipe at some point, maybe you are in a hurry and have visitors coming. I make these cookies most weeks for the biscuit tin, the main reason being that I always have the ingredients in the cupboard. They are very cheap to make and the mix does go a long way.
225g Self raising flour
100g light brown soft sugar
If you like you can add chocolate chips or nuts to this recipe but this does make them a little bit more expensive.
Preheat your oven to 180 degrees
Cream margarine and sugars together until fluffy, add the egg and mix.
Sieve the flour and salt and add to the mixture.
Roll into balls the size of a teaspoon and place on greaseproof paper on a baking tray. Do not place to close together as they do spread and will end up as one big cookie.
bake for 10 to 12 minutes until golden brown.
Let the cookie cool a bit before placing them on a wire rack, when hot they are quite fragile and may break.
