Scrumptious Lemon Curd Recipe
This quick and easy lemon curd recipe is delicious for making homemade tarts, for zesty lemon drizzle cake or if you are like me you will enjoy it with a nice scone. Its so simple and lovely to have on hand in the fridge, it will keep well for up to a week.
grated zest of 1 lemon
2 large eggs
Place a pyrex bowl over a pan of water.
Heat water until simmering.
Beat the eggs and sieve, then put to oneside.
Put the butter into the bowl, add the sugar and juice from the lemons, the zest of the lemon and stir.
When the above ingredients have melted add the beaten eggs.
Stir until it thickens.
Leave to cool.
Pour into a clean jar.
I keep my lemon curd in the fridge so it stays nice and fresh. This recipe is certainly one of my firm favourites and so much quicker than any other jams that I have made.
