Quick and Easy Tomato Bruschetta
This quick and easy tomato bruschetta is a perfect summer snack or it would also make a super tasty starter for your family meal.
6 or 7 medium tomatoes ( around 500g )
1 tbsp extra virgin olive oil
1 tsp balsamic vinegar
1/2 of a red onion
2 Cloves of garlic minced
1/4 tsp ground black pepper
6 fresh basil leaves finely chopped
Firstly cut a cross on the top of your tomatoes, then blanch in boiling water as they will peel easier.
Cut tomatoes into halves and squeeze out most of the juice and seeds.
Chop up into small pieces, making sure not to make them too mashed up.
Stir in the onions, garlic and chopped basil leaves.
Add the balsamic vinegar and extra virgin olive oil.
Add the black pepper and salt to taste.
Mix and cover and place in the fridge.
Cut up the french stick into slices.
Toast the bread on both sides.
Rub one side of the bread with half a clove garlic, just enough to give the garlic taste.
When you are ready to eat spoon the tomato filling on the top each of the sliced bread.
Do not do this too early as the bread will go a little soggy.
