Quick and Easy Chicken and Sweetcorn Pie
I started making this simple quick and easy chicken and sweetcorn pie a few years ago when I was at a loose end on what to have for dinner one night and it went down a storm, so has become a regular part of the meal plan.
We all have left over chicken at times and this is a very cheap meal indeed!
4 – 5 large potatoes
Left over cooked chicken breast.
1 cup of Sweetcorn
1/2 teaspoon Mustard
1 cup of grated cheese ( or more if you wish )
Cut the potatoes in to small pieces and place into boiling water. Boil them until soft.
In the meantime make the white sauce by melting the margarine in a saucepan, once melted stir in the flour and cook over a low heat for a minute or so. Gradually add the milk stirring all the time until it thickens nicely.
Add your diced chicken and sweetcorn to the white sauce and continue to heat.
Meanwhile take the potatoes off the heat when soft and strain. Add a teaspoon of butter and a splash of milk and mash until the lumps have gone.
Finally pour the white sauce mixture into a glass ovenproof dish and top with the mashed potato. Sprinkle with grated cheese and there you have it a quick, easy and delicious meal for 4!
Cook in a hot oven for around 20 minutes and there you have a yummy chicken and sweetcorn pie.
I served with peas to make it especially quick but would go nicely with any vegetable of your choice.
