Leftover Mincemeat Crumble Tray Bake
Trying to think of something different to make, I went through my cupboards and came across a jar of leftover mincemeat from Christmas. I had not made this mincemeat crumble tray bake for a while so thought it would be a nice change and also use up some of the food in the back of my cupboards.
It is very quick and easy so if you are looking for something sweet this is lovely and goes down nicely with a cup of tea.
250g self raising flour
50g brown sugar
2 tea spoons mixed spice
Pre heat your oven at 180 degrees / gas mark 4
Line a 9 inch by 9 x 7 inch tray
Rub the butter into the flour until it resembles breadcrumbs, stir in the sugar and mixed spice.
Tip half of the mixture into the lined tray and press dow.
Spread the mincemeat over the top until even.
Sprinkle the remaining crumble evenly to cover all of the mincemeat, do not press down this time, leave it as a crumble.
Bake in the oven for 35 minutes until nice and golden.
