Leftover apples for the freezer

Its always a job thinking how to use leftover apples that are just about ready to throw away.  We had a lot of apples from the tree this year but unfortunately there were plenty that were not so good.  Not wanting to throw them out I had to decide what I did with them.  The thing is we have a lot of something and then in a months time there will be none.

In my collection of recipes there are a few that use apple sauce, so I had a thought that if I make the apples into sugar free apple sauce then I take one out of the freezer when needed.  I do freeze apple pie filling but its usually in too big an amount for what I need so then I have to think of something else to make.

Well I decided I would freeze the apple sauce in my ice cube tray, I measured that each one is equivalent to 1 tablespoon so that will work out perfect when my recipe requires just a little bit.

Peel and core your leftover apples, chopped them into small pieces.

Put a drop of water in the pan.

Put it on the hob and bring to the boil.  Once you get it boiling turn the heat down and just have it simmering on low for about 20 minutes.

Take off the heat and let it cool down.

Use a stick blender or liquidiser until there are no lumps left.

Spoon the apple sauce into ice cube trays and freeze.  When frozen I run the back of the ice cube tray under hot water and this makes it easier to get them out.

Put them in a freezer bag, tie up and pop them back into the freezer.

If cooking a few apples you will have to go through this freezing process a few times depending on how many ice cube trays you have.

Keep the apple sauce in the fridge while waiting for the trays to free up.

You could use these apple cubes in lots of things, you can pop them in a plain yogurt, smoothies, cakes, serve with pork, cookies so many ways to use them up.

This method can be done with leftover pumpkin too.  It comes in handy when making a casserole or even just to flavour some gravy.
