How to Make Marshmallow Fondant Icing

Homemade marshmallow fondant icing is so much nicer than the bought one and comes in cheaper too. I must confess that I did use to buy it until one day I decided to try and make my own.

From that day I have never looked back. You can make it in small quantities and it only takes minutes to make.

Great for Beginners

If you have never made marshmallow fondant icing before it is so simple to make. It’s just a matter of microwaving the marshmallows and water, then add the icing sugar gradually. It is ideal for rolling out to seal a cake or you can make flowers or decorations.

I used pink and white marshmallows for this recipe but you can make any colour you like by adding a few drops of food colouring.

Storing Marshmallow Fondant

The fondant needs to be oiled slightly and wrapped in a strong plastic bag, making sure to remove all the air. It stores really well in the fridge for 3 – 4 weeks and you can just take out what you need. When you are ready to use the fondant just knead for a few minutes until it softens up.

  • 150g marshmallows
  • 1 1/2 tbsp water
  • 226g icing sugar


How to Make Marshmallow Fondant Icing

  1. Put the marshmallows and water into a glass bowl and microwave for 30 seconds.
  2. Leave to cool.
  3. Add half of the icing sugar and beat in so it is well mixed.
  4. continue adding a spoon of icing sugar at a time until 3 /4 of the icing sugar has been used.
  5. Turn out the fondant onto a greased worktop and knead for a few minutes adding the rest of the icing sugar little by little.
  6. If it gets too dry and does not stick together just add a drop more water until a smooth elastic ball forms.
