Easy oat cookies for the tin!

These easy oat cookies are so simple to make and are quite filling too.  When I am looking to make something quick to fill up the tins this is the recipe I go too.  Ideal for an on the go snack or just to sit down with a nice cup of tea!  I got this recipe from a lovely friend on instagram and I am delighted she shared with me.

Easy Oat Cookies

Ingredients:

225g Margarine

112g sugar

112g plain flour

225g oats

28g desiccated coconut

1/4 tsp bicarbonate soda

Pinch salt

Chocolate if required.

Firstly heat your oven to gas mark 4, 180C

Cream together the margarine and sugar until pale and fluffy.

Add the rest of the ingredients and mix until a ball is formed.

Roll out to about 1cm thick and cut out the cookies with a small cookie cutter.

Place on a greased baking tray.

Bake for around 20 to 25 minutes until golden brown.

Transfer to a wire rack to cool.

If required dip the side of the biscuits in melted chocolate and place on greaseproof paper to set.
