Easy Fruit Cake Recipe
I just love making this easy fruit cake recipe, its simple but delicious at the same time. Its also handy for a lunch box or just to be naughty now and then with a coffee!
175g Butter or margarine
175g Castor sugar
3 Large eggs
225g Plain all purpose flour
1/2 tsp baking powder
Rind of half a lemon.
A spoon of brown sugar.
Preheat your oven to 180 degrees (350 F)
Cream together the softened butter and sugar until light and creamy.
Beat in the eggs one by one.
Sieve the flour, salt and baking powder and gradually mix in to the mixture.
Add the sultanas, cherries and lemon juice and mix well.
Spoon the mixture into a loaf tin lined with grease proof paper.
Sprinkle the top with brown sugar this gives it a lovely crispy top.
Bake for 1 hour 20mins.
Check after an hour and if needed put a piece of grease proof paper on the top to stop it going too brown.
Cool on a wire rack.
