Delicious Lemon Cupcakes

We just cannot get enough of these delicious lemon cupcakes.  Having the sponge mix already waiting in the pantry it becomes a quick and easy treat for the family.  Be careful though as one may not be enough!

  • 1 1/4 cups of sponge mix ( 250g )
  • 1/2 cup sunflower oil  ( 125 ml )
  • 2 eggs
  • splash of milk
  • 2 lemons
Butter Icing:
  • 140g butter at room temperature
  • 280g icing sugar
  • 1-2 tbsp milk
  • Rest of the lemon zest and a drop of lemon juice.


Preheat your oven to 180°c

Put cupcake cases in a baking tin.

Zest the 2 lemons and then squeeze the juice out of them, put to oneside.

Place the sponge mix in a mixing bowl.

Add the beaten eggs and oil and mix well.

Add just a splash of milk, 3/4 of the lemon zest and a drop of lemon juice.

Mix well.

Divide the mix between 12 cases.

Bake for 10 – 15 minutes until golden brown.

Transfer to wire rack to cool.

To make up the butter icing.

Place your butter in a mixing bowl and add half of the icing sugar, beating until smooth and creamy.

Add the rest of the icing sugar and the milk and beat again until fluffy.

Add a few drops of lemon juice and the rest of the lemon zest.

Pipe your desired topping 🙂
