Cherry and Almond Shortbread

If you like bakewell tarts as I do, you are just going to love these cherry and almond shortbread cookies.

These are delicious with a nice cup of tea and ideal to make if someone is popping in.

Ingredients:

200g plain flour

100g sugar

100g ground almonds

200g butter

200g glacé cherries

1 1/2 teaspoons almond essence

Method:

Firstly preheat your oven to 160’c

Mix all the dry ingredients together in a bowl.

Add the chopped up butter and mix with your fingertips until it resembles crumbs.

Add in the chopped cherries and almond essence and mix until it goes into a ball.

If you have time let it rest for about 20 mins in the fridge.

Roll into an oblong sausage shape and divide into 12 evenly sized pieces.

Roll each piece into a ball and place on a grease proofed tray, leaving a nice space in between each one.  Once they are all on the tray flatten each one out so they are about 1cm thick.

Bake in the oven for approx 20mins until they are lightly golden.

Cool on a wire rack.

I just drizzled some icing over mine for decoration.
